Description

Dehydrated white onion flakes are produced from freshly harvested white onions that are inspected, topped and tailed, peeled, washed, sliced, then dried in multi-stage hot-air belt dryers until moisture falls to roughly 4-6%. The dried slices are colour-sorted, metal-detected and screened to an 8-20 mm band before packing. Flakes are the largest of the standard dehydrated onion cuts, retaining the natural concentric slice structure of the bulb, which is why they rehydrate into visibly identifiable onion pieces rather than dissolving into the matrix. Buyers choose flakes when the onion must be seen and chewed: instant noodle and soup sachets, dehydrated ready-meals, pickle and chutney bases, camping and military rations, retail dried-onion jars, and snack toppings. They are also the feedstock from which chopped, minced, granulated and powdered grades are milled, so flake quality sets the ceiling for every downstream cut. Quality control covers moisture by vacuum oven, total and acid-insoluble ash, hot-water insoluble matter, root and skin content, defective/scorched piece count, colour sorting for dark specks, and a full microbiological panel. Indian processors in Mahuva work to FSSAI Regulation 2.9.28 as the legal floor and typically ship tighter commercial specs, with FSSC 22000, HACCP, Halal and Kosher certification available.

500 kg-1 MT for trial/sample orders; 1x20 ft FCL (approx. 7.5-10 MT for this form) for full-container export. Nirvana quotes 1 MT MOQ; Joshi quotes 6 MT export minimum for the flake/kibbled family.
