Garlic Granules

Dehydrated Garlic

Garlic Granules

Free-flowing dehydrated garlic granules sieve-graded to 0.5-1 mm, roughly 16/24 mesh. Stronger and faster-releasing than flakes but far less prone to caking and clumping than garlic powder, which makes it the preferred dry-blend and seasoning-rub grade.

  • 0.5-1.0 mm sieve-graded, approximately 16/24 mesh
  • Free-flowing without anticaking agents, unlike garlic powder
  • Faster, stronger flavour release than flakes at equal dose
  • Meters reliably in dry blends and resists segregation

Description

Garlic granules are the finest cut short of powder, milled and sieve-graded to 0.5-1 mm, roughly a 16/24 mesh cut. The grade exists because powder and granules solve different problems. Powder disperses instantly but is hygroscopic, cakes readily and bridges in hoppers, and it needs an anticaking agent to stay workable, which is precisely why IS 5452:2008 relaxes the acid insoluble ash limit from 0.5 percent to 2.5 percent when anticaking agents are present. Granules stay genuinely free-flowing without that intervention, meter reliably through volumetric dosing equipment, and do not dust the way powder does. Flavour release is fast and the perceived strength is higher than flakes at the same dose, because the surface area is far greater. Core buyers are dry seasoning and rub blenders, snack and cheese-snack seasoning houses, sauce and gravy manufacturers, salad dressing and dip producers, and spice blending operations that need a garlic component that will not segregate out of a dry mix. Granules are the cut where controlled-temperature drying pays off most visibly, since any scorching in the dryer shows up immediately as dark specks against the pale background and will fail a colour inspection. Lots are sieve-graded, sortex-cleaned and metal-detected before packing.
