- FSSAI: total polar compounds (TPC) not more than 15% in fresh/unused vegetable oil or fat, and used vegetable oil/fat that has developed TPC above 25% shall not be used for frying. Trans fat not more than 2% by mass of total oil/fat in the product (effective January 2022).

- NOT SOURCED for fried onion. See gaps. (Plain dehydrated onion flakes are commonly quoted at 4% max ash, but that figure is not transferable to a fried, oil-bearing product.)

- Golden brown (Kings Dehydrated Foods, Mahuva); golden to deep brown reported across Mahuva suppliers. European commercial spec describes natural seasonal variation: 'Onion colour varies from August till July from light brown to more (dark) brown, scraps with different dimensions' (Rieber & Son).
- Shelf life
- 12 months is the common declared figure - 12 months for dehydrated fried onion granules (M A Food Industries, Mahuva) and 12 months unopened (Rieber & Son commercial spec). Mahuva trade quotes a working range of 6-12 months factory sealed (Joshi Foods) and 6-12 months in airtight packaging, extending to 11-12 months for fried coated varieties (Chhatariya Foods). One Mahuva premium variant is quoted at 1 year. Longer figures exist in Western retail (French's Crispy Fried Onions: 24 months) but reflect a different pack format.
- Storage
- Cool, maximum 28 degrees C, dry, sheltered from direct sunlight (Rieber & Son commercial spec). Store in airtight/barrier packaging away from moisture, heat, humidity and direct sunlight; avoid fluorescent light exposure for retail packs.
- Allergens
- Plain fried grade (onion, edible oil, salt): no EU Regulation 1169/2011 Annex II allergen present. Batter-coated crispy grade contains wheat flour and MUST carry a gluten declaration - EU law requires cereals containing gluten (wheat, rye, barley, oats) to be labelled. Reference retail declarations: 'Onions, vegetable oil (Palm), wheat flour, salt' with onions declared at 76% (Rieber & Son); 'onions, palm oil, wheat flour, dextrose, salt' with a wheat allergen declaration (French's). Gluten-free variants use rice flour, cornstarch or chickpea flour as the binder.
- Frying oil / ingredient declaration
- Refined palm oil is the default; Mahuva mills state frying is done in refined palm oil or sunflower oil, or to customer specification for bulk orders (Chhatariya Foods), and 'good quality palm oil' (Kings Dehydrated Foods, Mahuva). Joshi Foods (Mahuva) quotes 'low-oil, sunflower/veg, lab checked'. Palm-oil products sold into EU retail commonly carry RSPO certified sustainable palm oil claims (e.g. French's).
